Sweets for Santa
The big day is fast approaching and the snowy weather brings to mind many great recipes for this holiday season.
The snowballs are a delicious treat that are fast and easy and require no cooking.
I am sure Santa would love a plate of these for Christmas Eve.

1 cup sweetened condensed milk
2 1/2 cups graham cracker crumbs
6-ounce package semi sweet chocolate chips
1 cup chopped walnuts
1 cup Shredded coconut
In a large bowl, mix sweetened condensed milk and graham cracker crumbs.
Stir in walnuts and chocolate chips.
Chill until firm for one hour.
Scoop out mixture with a teaspoon, rolling each rounded teaspoonful into a ball.
Roll each ball in the coconut.
Set aside on a flat dish.
Cover and keep refrigerated until a half hour before serving!

The following for low fat chocolate cream pie is delicious and will not add significantly to your waistline.
Low fat chocolate cream pie
2 1/2 cups frozen non-fat vanilla yogurt
1 cup lite cool whip
1/4 cup crunchy peanut butter
1 small package instant sugar free chocolate pudding
8-inch pie pan
Put the frozen non-fat vanilla yogurt in a bowl and let is soften.
Mix in cool whip.
Add the peanut butter and the dry package of pudding.
Mix until incorporated.
Put in the pie pan and freeze until serving.
Egg nog cake
1-18 ounce package of pudding in the mix yellow cake mix
vegetable oil, according to package directions
eggs, according to package directions
Eggnog substituted for water according to package directions.
Preheat oven to recommended temperature on cake mix package.
Spray sides and bottom of a bundt pan with vegetable cooking spray.
Combine dry cake mix with required oil, eggs and nutmeg.
Omit the water, adding the same amount of eggnog in its place.
Mix and bake according to package directions.
Cool slightly and remove from bundt pan.
